
Why We Use Carbon Fiber Heating in Our Pizza Ovens
Ever notice how some ovens take forever to get back up to temperature after you slide a pizza in? It’s a pain. That’s why we went with carbon fiber heating elements. Instead of those old-school quartz lamps, we use a carbon filament tucked inside a quartz tube. It shoots out shortwave infrared radiation. In plain English? The heat doesn’t just hover in the air—it punches straight into the food. The heat is fast. Really fast. Because these lamps hit peak temperatures so quickly, your recovery time is basically nonexistent. Whether you’re running 110V or 230V, the carbon filament gets the job done way faster than a metal coil ever could. The best part is the control. You get this concentrated “footprint” of heat. It means you can blast the cheese and toppings to get that perfect bubble and brown without accidentally turning your crust into a charcoal brick. Now, a quick heads-up on the hardware. We use high-purity quartz because it lets the IR light through without blocking it. We also stick to R7s snap-in connectors. If a tube eventually burns out, you just pop it out and snap a new one in. No drama. But here is the catch:carbon filaments are fragile. They don’t like being shaken. If your oven rack vibrates too much or you bump the lamp while you’re installing it, the filament can just snap. To keep them lasting longer, we always suggest using vibration-dampening mounts. It’s a small detail, but it saves you a lot of headache later. If you’re looking at the engineering side, we plug these into a PID controller using PWM or SCR. This keeps the heat steady and stops those annoying “hot spots” you find in cheaper ovens. Just keep in mind that this much power creates a lot of heat—and not just for the pizza. Those quartz tubes get scorching. If your oven isn’t vented right or the insulation is thin, you might warp the outer frame or trip your thermal safety switches. Just make sure your cooling fans can actually handle the wattage you’re throwing at them, and you’re good to go.
